Luganeghe sausages

This fresh sausage typical of Northern Italy (though originally from Lucania - as the name suggests) has a recognisable long shape.Made by mincing pork belly and shoulder and stuffing the mixture in casings, luganega can be cooked in a variety of ways and flavoured with different aromas and spices.This pork product is perfect for many recipes, especially starters like risotto with sausage, or can be used to add flavour to soups.The luganega sausages by Bovo, available coarsely or finely minced, are also delicious when simply pan-fried or grilled.
