ROLLED PANCETTA

The best cuts of pork belly are chosen for this product, subsequently salted and seasoned with spices and left in brine for a few days. The pancetta is then rolled up, stuffed in the casings and tied to be cured in special controlled temperature and humidity.


In addition to the classic rolled pancetta, we also have pancetta with black pepper and spicy pancetta, with the addition, when rolled up, respectively, of black pepper and chili. These two types of pancetta have a strong flavour.


We also have the pancetta coppata, this is rolled pancetta enhanced with coppa. We select the best cuts, which are then salted, seasoned with spices and massaged to allow flavours to seep in every part of the product. The pancetta thus treated is then wrapped around a coppa that has undergone the same treatment, finally stuffed, tied and left to cure.
